Ingredients:

Meringue

5 egg whites

300 g of sugar

Cream

2 egg yolks

200g milk

80g sugar

20g flour

180g butter

1 small cup of espresso

1 packet of vanilla sugar

100 g peanuts

Instructions:

Put the nuts on a baking tray. Set the oven to 190°C/370F /gas 5 and roast the nuts until lightly browned (and smelling deliciously nutty) – about 10 minutes. Remove from the oven, leave to cool then pulse in a food processor until finely chopped but not powdery.

Preheat oven to 120°C/250 F. Draw a 20cm-dia. circle on 3 sheets of baking paper.

Put egg whites in a large bowl and beat, using an electric mixer, until soft peaks form. Add sugar, 1 Tbsp at a time, beating for 6 minutes or until mixture is firm and glossy.

Spoon meringue into a large piping bag fitted with a plain nozzle. Pipe meringue onto baking paper, drawn the circles.

Bake for 1 hour or until firm to touch. Cool in oven with door ajar for 2 hours, then remove from oven.

Boil a small cup of strong coffee.

Combine Yolks with sugar and flour in a small bowl. Stir until smooth (about 2-3 minutes.).

Milk should be heated gently and slowly. When milk is heated, add vanilla sugar, coffee and sugar.

Pour the boiling milk into egg yolks then beat until just combined. Cook over low heat until thick. Cool.

Soften your butter. Do this by placing the butter on the counter until it reaches cool room temperature. Whisk together the softened butter with the cream.

Put 1 meringue disc on a cake stand. Spread with 1/3 of the coffee cream and 1/4 of peanuts. Carefully place the second disc of meringue on top. Spread the coffee cream and peanuts.

Then place the third disc and finish with coffee cream, and peanuts. Decorate with melted chocolate.

Use a parchment bag to pipe a thin spiral around the cake. Starting from a center point, draw lines to the edge of the cake.

200 ml of whipped cream

Instructions:
Whisk together the softened butter with the condensed milk. After a while, begin to gradually add the peanuts. While slowly beating, add the whipped cream.
